Then put chopped Tomato & Water. Boil it for a while & then turn the flame off. Keep the mixture cooling down & put it into a mixer jar. Then add some Salt, Kashmiri Red Chilli Powder, Crushed Red Chilli & some Tamarind Pulp. Grind well & take out the Chutney into a bowl. 𝐅𝐨𝐫 𝐓𝐚𝐝𝐤𝐚, take a pan, put Oil, Asafoetida, Mustard Seeds, Curry Leaves, and Dry Red Chili & saute all well. Give tadka to the chutney & Chutney is ready to serve. 𝐅𝐨𝐫 𝐃𝐨𝐬𝐚, take a bowl & put some Sorghum Flour/Jowar Atta, Cumin Seeds, Salt to taste, Chilli Flakes, Coriander Leaves, crushed Ginger-Green Chilli & Water. Mix all well, cover & keep it for 10 minutes. After 10 minutes, you can adjust the consistency by adding water. Then keep the nonstick tawa/pan for heating. When the pan is super hot, pour the batter on the pan. Then spread Oil and allow to roast for 3 minutes or until the dosa turns crisp. finally, enjoy the crispy Jowar Dosa with tasty Chutney. Prepare a steamer in a heavy-bottomed pan. Add water and a stand. Also, Grease a mould or thali well with oil. 𝐅𝐨𝐫 𝐃𝐡𝐨𝐤𝐥𝐚, firstly, in a large bowl take Sorghum Flour/Jowar Atta, Semolina, Gram Flour, Curd, grated Ginger & Green Chilli, Salt to taste, Turmeric Powder & Water. Mix well and rest the batter for 10 minutes by covering it. Then add some Water, Eno Sachet & chopped Coriander Leaves. Pour the batter into the greased bowl. Sprinkle some Crushed Red Chilli Powder & steam the dhokla for 10 to 12 minutes on medium flame. After steaming keep it aside till it cools down completely. 𝐅𝐨𝐫 𝐓𝐚𝐝𝐤𝐚, keep the tadka pan on the flame and put Oil, Mustard Seeds, Cumin Seeds, Asafoetida, long chopped Green Chilli & Curry Leaves. Saute all well & give the tadka on the dhokla. Serve it along with Chutney. Add salt, cumin, black pepper, green chilli, red chilli powder, turmeric powder, cabbage, and coriander leaves to the bowl. Mix well. Gradually add water to the bowl while mixing to form a smooth batter. The batter should have a pouring consistency. Cover the bowl and let the batter rest for 10-15 minutes. After the resting time, mix the batter well again. If it has thickened, add a little water to get the desired consistency. Heat a non-stick tawa or a griddle over medium heat. Once the tawa is hot, pour a ladleful of batter on the tawa and spread it out in a circular motion to form a dosa. Drizzle a few drops of oil around the edges of the dosa and let it cook for 2-3 minutes on one side until it turns golden brown. No need to flip the dosa, as it cooks only on one side. Serve hot with any chutney of your choice. How to make Pancake In a mixing bowl, combine sorghum flour, rice flour, curd, and salt. Add cumin seeds, red chilli, green chilli, grated ginger, and turmeric powder to the mixture. Mix well. Add enough water to make a smooth batter. The batter should be of a slightly thick consistency. Add chopped capsicum, tomato, and coriander leaves to the batter. Mix well. Cover the batter and set it aside for 10-15 minutes. After 15 minutes, add Eno fruit salt to the batter and mix well. Heat a non-stick pan or griddle over medium heat. Once the pan is hot, pour a ladleful of batter onto the pan and spread it in a circular motion to form a pancake. Cover the pan with a lid and cook for 2 minutes. Remove the lid and drizzle some oil around the edges of the pancake. Cook until it turns golden brown. Flip the pancake and cook for another minute. We already have seen jwariche dhirade recipes. Here is one more variation for you. This is a real quick recipe and is heavy on stomach. You can try this recipe at home and drop a comment for me. Ingredients: • 1 cup Jawar flour • 1/4 cup Rice flour • 1 1/4 cup Water • Red chili powder • 1/2 tsp Coriander powder • 1/2 tsp Cumin seeds • 1/4 tsp Ajwain / Carom seeds • Finely chopped Capsicum • Finely chopped Tomato • Chopped Green chili • 1/4 tsp Turmeric powder • Shredded Carrot • Finely chopped Coriander leaves • Salt to taste • 1/2 Lemon juice • Oil Method: • Take jawar flour, rice flour and mix well. • You can skip rice flour if you don’t want. • Add a little water at a time to make thin batter. • Add red chili powder, coriander powder, cumin seeds, ajwain, capsicum, tomato, green chili, turmeric powder, carrot, coriander leaves, salt and mix everything well together. • Adding veggies is optional or you can add veggies of your choice. • Add lemon juice and mix well. • You can use buttermilk in place of lemon juice. • Heat up a pan on medium heat and spread oil. • Mix the batter once and add ladleful better on the pan. • Cover and cook for about 2 minutes. • Remove the lid and spread a little oil on the dhirade. • When lower side is cooked well flip over and cook well from other side too. • When the dhirade is cooked well from other side too take it off into a dish. • Jwariche dhirade is all ready. • You can serve the dhiradi as it is or with chutney too. • You can make around 8-9 medium size dhiradi from the above proportion.
