Pomme Souffle Recipe - Puffed Potatoes In this video, I will show you 2 different ways to make pommes souffles. *method 1.* The first method requires you to cut russet potatoes to 1 mm thickness, then covering one set of the potatoes with cornstarch or potato starch and evenly coating the second set with egg white, place the two slices together then cut them with a 4cm/1.6inch diameter cutter. When frying you have to lift the side of the pan closest to you up by 1cm and rock the pan back to front, the temperature of the oil should be 140ºc/284ºf and you should have little oil in the pan, about 2cm depth of oil thats 0.8inches deep. Keep moving the pan till the potato slices puff up, then baste them in the oil until they become crispy. *method 2.* For the second method cut the russet potatoes in a rectangular shape then use a mandoline to cut into slices of 2.5mm-3.5mm thickness. Use the same oil moving technique as in method one and place these slices in an oil bath at 130ºc/266ºf moving them constantly until the slices blister then transfer them to the 180ºc/356ºf oil and they should puff up, after that keep basting them until crispy then they are done. The Best Way to Pommes Soufflées They keys to a puffy potato is thin slices, and jiggling your cooking pan. Our first attempt to pommes soufflées was almost successful (we didn't have a thin cut). However our second attempt was just about what we needed. By the third attempt we were able to get a nice, puffy crisp! It was an exciting time that will be etched in my memory for time immemorial. We got the idea from the "How to Make Sushi" YouTube channel. So if you don't like our version, then check theirs out. How To Make Sushi version: 🤍 Ingredients: 1 potato Corn Starch 1 egg white Vegetable oil Slice potato into 1/8 inch thin slices. Spread one side of half your slices with corn starch. Spread one side of the other half of your slices with egg white. Connect the slice with corn starch with the other slice with egg white. Cut out circles. Heat vegetable oil to 300°F. Place potato circles in the oil and jiggle your pan right away until you see it puff. Baste your potato puff with oil until you get a golden brown look. Season with salt and serve. Well wash your potatoes and cut them in very thin slices (1mm) using a mandoline. 2. Absorb the potato slices starch excess using a paper towel. 3. Sprinkle some cornstarch on top of half potato slices and remove the starch excess with a brush. 4. Brush a generous amount of egg white on top of the remaining potato slices. 5. Match two slices (one with the cornstarch and the other with the egg white) facing each other: the side sprinkled with cornstarch will face the side brushed with white egg. 6. Press the two matched slices to seal them together. 7. Cut a small circle (or a square shape, it's up to you) in the center of every matched slices: be careful to cut out the potato skin. 8. You'll get skinless potato circles made of two potato slices matched together. 9. Heat the frying oil over medium-low heat until very hot (it's ready when the handle of a wooden spoon will bubble, about 170°C). 10. Fry the potato circles for about 2 minutes or until start to slightly golden spot and are well puffed. 11. Remove from the oil and place onto a kitchen paper to absorb the oil excess: the potato circle deflate, don't worry, it's normal! 12. Increase a bit the heat of the oil: you'll need about 175°C hot oil (the handle of a wooden spoon will bubble a lot). 13. Fry for the second time the potato circles in the very hot oil for about 2 minutes or until evenly golden. 14. Remove from the oil and place onto a kitchen paper to absorb the oil excess. 15. Salt and serve immediately with your favourite dipping sauce!

The technique is to accommodate home cooks. It is actually a new technique that I developed. Usually those potato require two fryer pan. In that video only one fryer will be used so it does not intimidate anyone. You will need to be able realize those gorgeous potato heart: 1 Russet potato. How to make Puffed Potatoes - Pomme de terre soufflées - Step by Step Potato soufflées Welcome to my cooking class. During that class, you will learn how to make the perfect Puffed Potatoes - Pomme de terre soufflées. Recipe Pommes soufflées are cooked by the Two-step method in oil: STEP 1: The potatoes are cut into 3-mm thick (1/8-in thick) oval, Rectangular, square slices, then blanched for approximately 5 minutes between 280°F and 300°F moving them around until softened. STEP 2: The potatoes are transferred into oil heated to 350°F (177°C) oil. This will make the potato sticks inflate, if the oil is to hot, the potatoes will color to fast and won't achieve a crispy texture. Cook the potatoes in the oil till the are nice golden brown and crispy. Drained on a kitchen towel season them with salt and serve right away.
